Great Camping Recipes



ok guys i love to do cooking while away either the weekend or longer but find myself cooking the same things so i would like to start this post and lets make a list for recipes while we enjoy the out doors can be cooked anyway ( campfire, bbq. grill,camp oven what have you doesn't have to be dinner can be any meal

ok i will start this off

Sausage Hotpot

4 good-quality, high-meat-content pork sausages, about 300 g in total
1 can chopped tomatoes, about 400 g
2 can red kidney or barlotti beans, about 410 g each, drained and rinsed
2 tablespoon tomato chutney
2 teaspoon paprika. Potato and parsnip topping: 750 g potatoes, peeled and cut into cubes
1 large parsnip, about 170 g, chopped
2 tablespoon low-fat milk
1 tablespoon extra virgin olive oil
salt and pepper


Preparation
Preheat the grill to moderate.
Place the sausages under the grill and cook for about 15 minutes, turning regularly, until evenly browned all over and cooked through.Meanwhile, cook the potatoes and parsnip in a saucepan of boiling water for 15 minutes, or until tender.At the same time, put the tomatoes, the kidney or barlotti beans, chutney and paprika in a saucepan and heat gently until bubbling.Remove the sausages from the grill (leave the grill on).
Allow to cool slightly, then cut each one diagonally into 4 thick slices.
Add them to the tomato and bean mixture.
Pour into a flame proof dish.Drain the potatoes and parsnip, and mash with the milk and oil.
Season with salt and pepper to taste.Spoon the mash evenly over the top of the sausage and bean mixture.
Brown under the grill for 5 minutes, or until golden and crisp.

Serve hot

what you need

butter
bacon
sliced bread
eggs
salt and black pepper


method

Into the frying pan? Melt a little butter in a pan and fry the bacon until it?s cooked. Remove it from the pan and put it on kitchen paper to absorb the grease.
Butter the bread slices on one side only. Place one slice of bread with the buttered side down in a jaffle iron.
Top the slice with a strip of bacon, then carefully break an egg on top of the bacon and season with salt and black pepper.
Put the second slice of bread on top with the buttered side out and close the jaffle iron.
Bring the jaffle over medium-hot coals or on a gas stove until the bread is golden brown on both sides.
tip: If you use medium heat, the egg should be done when the bread is just right.
caution content's will be hot lol

FREEWHEELING FRITTERS

ingredients:

1 !/2 cup plain flour
1 1/2 cups s/r flour
salt n pepper to taste
1 can of corn kernals strained
1 cup of milk (add more if needed to reach a batter consistency)
1 cup of left of meat from night before(can leave out if needed)
a few drops of yellow food dye (makes it look pretty).

method:

add all ingredients bar meat and corn in a large mixing bowl and mix together till batter like consistency then add meat and corn and food dye mix well
heat oil in a fry pan(enought to cover bottom of pan)
spoon two spoon of mixture into fry pan once bubbles have formed flip and cook till golden brown . serving suggestion : with mash,by themselves with sauce. chip's salad etc.

dirty gear bag wrap


ingredients:

1 x packet of soft wraps
2 cups of smokey bbq sauce
500g grated cheese
1 cup tomatoe suace
1 packet of bbq rub seasoning
15mls tabasco sauce
2 tabelspoons of oil
1 1/2 cup of brown sugar
3/4 cup of stock which ever is prefered
500g-1kg of eith chicken breast or boneless pork or similar


utensils

camp oven and fry pan
grated if did not pre grate cheese
two forks
egg flip


1 pre heat oil in camp oven
2 put in meat and bbq seasoning and brown the meat making sure you get a good coating of the bbq seasoning on the meat
3 ad brown sugar and stir for 1 min
4 add all remaining ingredients:
simmer for 40 min till meat falls apart
separate meat using two forks shredding into small pieces. then stir it so meat is covered with sauce.
5 heat fry pan place one wrap at a time in fry pan just to warm it up.
6 remove wrap from fry pan add a little grated cheese and two tablespoons of dirty gear bag mixture to the wrap fold wrap and enjoy

spare wheel cob

ingredients:1 x cob loaf 1x packet of spring onion soup 1x onion 1x 425g tub of sour cream 1 x packet of bacon 2 cups of grated cheese

items required sauce pan, spoon foil ,fry pan, oil just enough to fry ,bacon , onion, knife

method cut top (retain to put on top for later) of cob and hollow out cob (keeping rest for later for dipping and scooping filling etc) set aside 2 dice onion then fry with bacon 3:in saucepan add sour cream fried bacon soup mix and fried onion and mix then heat till thickens 4 add mix to cob place cheese on top, replace the top that you cut off and wrap in foil 5 either place on crate on side of fire for 5 mins or in camp over for 5 mins just to heat the cob and make it crusty may take less or less time depending on heat of fire advise to check after 3 min 6 remove from fire unwrap and serve on a plate with bread removed from middle . use bread removed earlier to scoop filling as well as top as filling goes does start breaking out of cob of etc till all gone.other thing's you may like to try in filling: spinach, spring onion ,leek (would be required to cook before adding to mix), corn

1x can of campbles spaghetti sauce with beef

foil

method make a hole in centre of bread roll and filling wrap in foil place on outta edge of five for 4 mins or so but not to long or they will be hard as stones lol remove from fire unwrap and enjoy could also do a bacon and egg version

INGREDIENT 8 baking potatoes

1 1/2 tablespoons olive oil

125g unsalted butter, or garlic butter

sliced Scrub the skin of each potato well, rub with oil, then wrap in a double thickness of foil. Bake for hour give or take and few min depending on how you like them place them in the embers of a fire for a further 20 minutes. Carefully remove potatoes, open up foil, split potatoes and add the butter
